These delicious gluten & dairy free truffles are packed full of nutrients, protein & phyto-nutrients. They are best served chilled & are fantastic for kids & adults alike! This recipe makes 18 medium or 24 small truffles.
3/4 cup raw almonds
1/2 cup raw cashews
1.5 cups pitted dates
3/4 cup dessicated coconut (plus extra for rolling)
1/2 cup raw cacao powder
1/3 cup refined coconut oil
1/4 tsp celtic sea salt
2 tbs raw honey or agave syrup
Place almonds in a blender or grinder & pulverise until as fine as possible. Place in seperate bowl.
Place dates, dessicated coconut & sea salt into a blender. Pulverise until fine.
Add almonds & remaining ingredients. Blend until the mixture resembles a rough dough.
Press firmly & shape into balls. Roll balls in coconut & refrigerate for at least 1 hour. Best served chilled.
