Simple Avocado & Greens Salad

Summer SaladThis is a classic salad that teams perfectly with almost any main dish. Avocado contains 3 types of healthy fat, is high in fibre and contains close to 20 different nutrients including potassium, Vitamin C & B5. Avocado has also been found to increase the absorption of certain antioxidants including lycopene, which is abundant in cherry tomatoes.

Ingredients

3 handfuls mixed greens
1/2 punnet cherry tomatoes (halved)
1 avocado (sliced)
1/4 red onion (thinly sliced)
150gms goats feta (optional)
Drizzle of olive oil
Squeeze of lemon juice
Sea salt & pepper to taste

Method

Place mixed greens, cherry tomatoes, avocado, red onion & feta (if using) in a large bowl. Drizzle with olive oil, a squeeze of lemon juice & add sea salt & pepper to taste.

Toss together and serve!
