Vanilla & Coconut Chia Pudding

This delicious pudding can be eaten for breakfast, dessert or as a really quick snack. Chia seeds offer the highest combined plant source of omega-3, fibre and protein, alongside a range of vitamins, minerals and antioxidants. The health and wellness benefits of chia are far reaching, from increased energy levels and improved digestive health, to helping promote healthy skin, hair and nails. Chia seeds absorb up to 16 times their weight in liquid  leading to an increased feeling of fullness and also helps your body regulate hydration. 

Ingredients:

1/4 cup chia seeds
1 cup coconut milk
1 tsp vanilla bean paste (or seeds from 1/3 of a vanilla bean)
1 tbs organic maple syrup or honey

Toppings:

Fresh raspberries
Coconut flakes
Stewed fruit
Sliced Banana with cinnamon
Blueberries, toasted almonds and maple syrup
Raw cacao powder (mix through for a chocolate pudding)

Method

In a medium bowl, combine all the ingredients. Mix well and refrigerate.

During the first 30 minutes, stir the mixture every 10 minutes as it thickens.

Cover and refrigerate for at least 3 hours or overnight.

Serve when the mixture reaches a custard-like consistency.
